That weekend I gained 10 pounds...

So this weekend I didn't do much!  Basically I did not see another human being! #solitarylifeprobs  Why is it that I did something every single night last week and had no plans this entire weekend!!  I go in spurts really, I guess!  I either have nothing to do, or plans both days!  Big doings next weekend though!

But back to this weekend!!  In Friday's post, I mentioned that I started receiving Hello Fresh delivery! I got lots of great feedback and questiions about it in the comments. Thanks.  The weekend was spent making the rest of those meals and then some.

Friday I was super excited to get home, throw on my sweats, pour the wine and start making meal #2! (I might have started at 3:15...love getting home early on Fridays!)  The second meal was a spinach, sun-dried tomato chicken penne dish.
The meals come packaged with all the ingredients for each meal in a bag!  
Super easy to figure out what goes with what.  

Really good!  And another really easy one-pot meal (with the exception of the pasta, cooking first!!) I always get a little iffy when I cook chicken in a skillet but it worked.  Wish I took a picture of it all as it was cooking but I forgot. I also realized that I definitely need a bigger skillet.  The last thing you do before adding the cooked pasta to the skillet was add the spinach.  You're supposed to add it all, but I had lots left over.  Eventually adding EVERYTHING to the skillet in the end, it was overflowing!
I had a ton of this leftover!  It was really yummy!!

Saturday was really rainy!  So I decided to bust out my crock pot.  In my Peapod order earlier in the week, I got all the ingredients to make a recipe that Mel at The Larson Lingo posted a few weeks back, Crock Pot Chicken Tacos.  Only three ingredients!  It's kind of like the Salsa Chicken I make, but kicks it up a notch, literally.  The taco seasoning really gives it a kick.  And the chicken is shredded for tacos. Find the recipe on Mel's website {here}  I had even more of this leftover.  I really have to invite people over when I cook!


My taco fixin's included some of the spinach salad I had left over from my dinner Friday, shredded cheese (the mexican blend) and sour cream.  I wrapped it all up in a burrito.  YUM!!

Sunday I made two meals! Three, if you count the breakfast burrito I made with eggs and the rest of the spinach! 

For lunch, I made my third and final Hello Fresh meal of the week!!  A Greek Flatbread pizza.  I'll be honest, this was the first homemade pizza I ever made.  I did ok, not great, with the dough.  Two thumbs up to Hello Fresh for suggesting using a wine bottle to roll out the dough, if you don't have a rolling pin!  This wasn't difficult, just a lot to chop and cut up.  I also should not have left this for last.  Some of my tomatoes had to be discarded!

When it's done you top the pizza with the romaine lettuce coated in balsamic vinegar.  You can't really see the rest of the ingredients but there's grape tomatoes, garlic, red onions, feta, mozzerella, and artichokes, under there! 

For dinner I had a piece of salmon that I had to eat before I couldn't anymore.  Anytime I make salmon, I wrap it in a foil pack to steam it.  This is my go-to method.  I topped it with a honey balsamic dressing and baked it on 400 degrees for 20 mins.  So easy.

I had this with a side of lemon shrimp risotto I brought home from Meetball.

I'll be honest, I couldn't finish this all, even though it was really good! 

I feel like all I did was eat these last three days!!  I may not have gained 10 pounds but it certainly feels like I did!  I am getting another Hello Fresh Delivery today and am looking forward to more delicious meals.  But I might have to skip next week...I need a break from all this food!! Was anyone else a little OFF this week!?!?

Holy Cow FRIDAY!!  I thought you'd never get here!!
But my favorite thing about Friday?!?  Sharing the week that was with all of you!



This was a rough week...I was just totally off!!  I think it's this Spring Forward business!  It's too dark in the morning!  But on the bright side, I'm loving the "lighter later" aspect! I was also really busy each night this week, which is good too.  But now that Friday's here, I'm just counting down the hours til school's over today, I get home, and can curl up on my couch with wine in hand!!!!   This made me laugh when I saw it over the weekend!!

I'm all for THIS!!  Who's with me?? 



Finally a little spring-like weather this week!!  It's not as warm as I would like but it was beautiful on Monday and on Wednesday we even hit the upper 50's!  It was so nice!!  And I've found that my mood is greatly improved when it's sunny and warmer!  I'm getting happier!! And I got to wear something other than my rain boots and a sweater dress!!  Ha!!  YAY for red pixie pants being in the mix this week!!


This week I got my first Hello Fresh delivery! It's a weekly delivery service that sends you all the ingredients for three meals (for 2) a week.  All I need to do is cook them!  I decided to try it after throwing out about $100 in groceries! And I had a coupon for $40 off my first delivery (SCORE!) I liked the idea of just getting exactly what I needed to make the meals and having no waste. I only made one of the three meals so far this week (probably not smart eating out three nights the first week of meals!!), but I thought it was really good. A few Fridays back I mentioned that I received my first Influenster #VoxBox in the mail!!  #XOVoxBox I have been using the complimentary products I received  to test and review!!  Lots of fun new stuff!!  Eventually I'll get my review post together of all the products, but I just had to tell you all about the Tide Pods with Febreze I got!!! 
Is it sad that I was most excited to receive these in my box??

I've used them a few times and am just loving them.  I've been using Tide Pods since I moved into my house because it came with a front load washer.  These little pods kick it up a notch.  They smell awesome, everything is still nice and fresh, even today!  And those red pixie pants I mentioned above!  Still like new after watching and drying them with the Tide Pods with Febreze!!  No fading!!  Woo hoo!  With totally be buying these from now on!  Definitely worth the little extra!!



I've been listening to this album all week!  I just love Ed Sheeran!  What a cutie!!

Monday! EW...

And just like that, Monday is here!  A Monday after any weekend is rough but the first Monday after Daylight Savings Time...

For real!!  How hard was it to get outta bed this morning.  I always forget that it's so dark!!  I have to get adjusted to it!  So do the kids for that matter!!  Tired cranks were in front of me today!  HA!  But I gotta say...I am loving this lighter later bit!  And it warmed up to fifty today!  My mood is improving, I've talked to my neighbor, who told me she has isn't seen me in for ever!  (To which I promptly told her, I haven't seen anyone, being so sick ALL. WINTER. LONG!  But she offered me so crab salad, and I gotta say it was delish.  We also made a wine date!  Love my little neighbor!! (She's in her 70's BTW!!)

On to the weekend! Or really just Saturday!!  It was a busy one!!  My friends Kerri and Chris, who I talked about here and here, had a first birthday for their daughter Brinleigh. So me, my sister and brother-in-law and nieces headed to the party.  Kerri got close with my older sister Meghan when she became pregnant with her first daughter, Addison.  She asked her for advice, help, etc.  (cause Lord knows she's not getting any of that from Me!!....LOL)

It was a really nice time.  If I was a better blogger, I would have taken more pics!  Kerri did a really great job decorating and had such a fun craft table for the kids!!  Here are the few pictures I did take!

I know this is a random picture of me and my BIL cheers-ing with Rice Krispies treats, but there's a funny story.  At the party Anthony brought up the fact that he's been with my sister for 20 (!) years.  So....I told him (again!) that I would never forget the night I met him because he was wearing a hideous tiger shirt, had long curly hair and I was thinking, where on earth did Meg find this guy?!? Ha!  He remembers that I was making Rice Krispie Treats.  So we always laugh about it! And lo and behold there were Rice Krispie treats at the party!  So we toasted to twenty years!!  On the table you can see some of the crafts and things Kerri had for the kids!

After the party, and with about twenty minutes to spare when I got home, I headed out to dinner with some of my work besties.  It's always fun to chat it up, drink wine and eat sushi together outside of work.  Another friend we used to work with was supposed to come out from Brooklyn and we were supposed to all just hang at my place, but with the rush that was Saturday (and the Peapod delivery that never was on Thursday), I was really happy to just go out!  Even if our Edamame was taken before we were done!!  But we got some more had another drink and finished that bowl!


Sunday was a quick one!

Three glasses of wine, Nyquil at midnight and springing forward, I slept in til noon...woo hoo!!  

Sleeping in was great, but then you look up and it's 6!  Ha!!  Did some quick loads of laundry, cleaned up a bit, did some after care duties, and got ready for the week!

How long it takes for the weekend to get here, but how quickly it goes!!  

Looking on the bright side of things, it's gonna be in the fifties all week, I have plans with my sister tomorrow, which I'm really excited about, and when I walk home on Wednesday and Thursday night from school, it'll be light out... wooohooo!!!

Friday!

A two-hour delay and an early dismissal day!!  Not too shabby of a Friday!!  Another snow storm rolled in Wednesday night, leaving us with no school yesterday and a two hour delay today.  Because it's also Parent-Teacher conferences this afternoon, it was a scheduled 11:30 dismissal.  Basically we'll be in for one period!  Ha!

But anyway... on to the fun stuff!

It's another Style Me Bloogers Link up!!

And today we're getting all crafty!!!  You read that right!  Today I am getting CRAFTY!!
This one was TOUGH!!  I am NOT CRAFTY!!  I wish I was, but I'm not!!  There was a time when I was though, so today we're going back in time!  Kinda like I did yesterday...just not as far!!

I go in spurts...as a kid I made those string bracelets, I made those hook rugs, did needlepoint for beginners... I got older and all they fell to the waste side.

When scrapbooking was all the rage, I hopped on that bandwagon.  I bought the supplies, had parties, went to classes...the whole nine!  And I LOVED it!!  And then, as it does, Life happens, and you move on to the next thing.  But the thing was, I never moved on to the next thing...there hasn't been a next thing for me!  My mom and sister make Shutterfly albums now with their pictures!  I don't (My sister did have photo book making party once, where I attempted to make one too, but truth be told I drank more mimosas than I put pictures together!)  I just don't know...it's not like I don't have the time...because in all honesty, I most definitely, probably do! #solitarylifeprobs  

There was this ONE time I was pretty freaking crafty!!  I made a scrapbook as an engagement present for my bestie, Kerri (and her husband Chris, who you may recall me talking about here) !! Basically I decorated the pages!  And it came out GREAT!!  It pisses me off though, because I can pretty much guarantee that, to this day,  it's not completed...7 years later!!  And I can totally say that because she's my bestie and all she had to do is put the damn pictures in!! LOL

This project was a huge undertaking (and scrapbooking is expensive too! HA!) so my sister helped me with it.  We had a blast doing it together!  She'd come to my house, I'd spend nights at hers. We'd drink wine and scrapbook, and chat and laugh, and drink more wine!  It took us probably about a dozen days over a few weeks in the spring and summer of 2008 to complete it...from planning, to purchasing, to putting together to completing!!  The pictures that follow are of each page.




The first page I completed because it was the engagement, which I was there for. And had already happened, so I could fill the page!  They got engaged during a St. Patrick's Day parade, which, Chris, a firefighter, was marching in.

I really love the way this came out.  After I completed this, my mom loved it so much she made one too, for a friend's daughter as a shower gift!!  Now that I've put this post together, it's made me want to get back into scrapbooking!!
